Cold brewing

I grew up drinking iced tea and was delighted to find that there is a way to enjoy tea when you are not in the mood for a hot beverage, that far surpasses my mom’s sugary sweet concoctions.  Once again tastes will vary and there is room for improvisation with amounts of tea and varieties used.  It is highly recommended that you do not use this method for herbal teas or tisanes, as they have not gone through the “kill” process that is used on camellia sinensis tea, and there may be food-safety issues.
